Jenny’s Clean Eating Recipe: Skinny Soup

Serving Size: 6

Ingredients:

  • 1/3 of a whole cabbage, chopped
  • 3 medium size tomatoes
  • 2 green onion stocks chopped
  • 1 bag of baby bok Choy (usually pack of 6)
  • Full head cauliflower cut up into bite size pieces
  • 2-3 carrots
  • 3 celery parts
  • 6 cups water
  • 2 cups chicken broth (vegetable broth for vegan version)
  • Cayenne pepper
  • Salt
  • Pepper

Instructions:

Put all that good stuff into your pot and let it boil for 8-10 mins then lower heat setting to medium for 25 mins. You can add your own spices and favourite veggies!! You can also add chicken if you like.  Enjoy!!
